Marble Cake with Cherries
We have added juicy cherries to the popular classic marble cake and baked it traditionally on our Blechrein Classic. A delicious cake for the whole family.
Ingredients for 1 loaf pan:
200 g (approx. 14 tablespoons / 7 ounces) butter
200 g (1 cup) white sugar
4 eggs
300 g (approx. 2 cups and two tablespoons) all-purpose flour
1 teaspoon baking powder
150 ml (approx. 2/3 cups) whipped cream
3 tablespoons cocoa powder
300 g (approx. 1 ¼ cups) Morello cherries
Powdered sugar
Directions:

Preheat oven to 160°C (320°F).

Mix together the butter and sugar until they are smooth. Beat in the eggs and the ¾ of the cream. Combine the flour and baking powder and stir into the creamed mixture.

Prepare the loaf pan with Blechrein Classic baking paper and fill in half of the mixture. Spread 150 g of the Morello cherries on the mixture in the pan.

Add the cocoa powder and the rest of the cream to the rest of the mixture and fill into the pan. Spread the rest of the cherries on top of the dark mixture and use a fork to swirl the batter in order to create a marble effect.

Bake in the preheated oven for 65 - 75 minutes (test with a skewer). Serve with powdered sugar on top.
