Valentines Cookies with Raspberry Frosting
For Valentine's Day we delight our sweethearts with these delicious lemon cookies with creamy raspberry frosting. Arranged on Blechrein Black a real eye-catcher, which promises heavenly indulgence.
Ingredients for 20-25 cookies:
220 g of flour
110 g of sugar
120 g of butter
1 teaspoon baking powder
1 egg
juice and peel of ½ lemon
vanilla sugar
Frosting:
150 g cream cheese
70 g of powdered sugar
5 raspberries mashed
Preparation:
Stir butter, sugar, vanilla sugar and egg until creamy. Mix baking powder with flour and mix in. Wrap dough in cling film and refrigerate for 1 hour.
Preheat the oven to 180 °C. Roll out dough on a floured surface and cut out hearts. Place the hearts on a baking sheet lined with Blechrein Black and bake for about 10-15 minutes until golden brown.
Mix cream cheese with icing sugar until creamy. Puree raspberries and mix with the cream cheese.
Spread raspberry frosting on the cooled cookies and let it get hard.
